My taste is pretty incomprehensible even for me, but I guess everything started with Kagaku Kyuujo-tai TechnoVoyager aka Thunderbirds 2086 - https://myanimelist.net/anime/3969/Kagaku_Kyuujo-tai_TechnoVoyager and at this point I wasn't even familiar with the Thunderbirds franchise...or Stingray, or Captain Scarlet, or the rest of the Supermarionation.

Oreimo would be the closest I think.
But maybe SAO, that was my first anime (not technically, I watched Pokemon and stuff like that as a little kid) and that part with Sugu hooked me on anime because I wanted to see a story where the MC isnt a huge fag like Kirito who went for Asuna instead

GTO, Kaguya (sorry Aka, but you screwed up with Oshi no Ko), Air, ReZero, Natsume, Dragon Ball Z, Noragami, Shaman King, City Hunter, Minami Ke, Mahouka, Spy x Family. Something that either has amazing humor and a large cast of charismatic characters, or has enormous spiritual and emotional potential, or is an energetic action that combines dramatic passionate moments and fun SoL elements.

I'd say that the anime which got me into anime, remain my top of top favorites and most special and important to me to this day, are Inuyasha and Koi Kaze, but while I have watched and appreciated/given high ratings to numerous other romantic dramas and specifically transgressive romance especially, the problem with describing them as defining my taste per se is how nigh impossible it is to replicate the experience in terms of finding other anime series sufficiently similar to them. They really are like unlike anything else I've seen since in anime (and anything I saw in non-anime prior to first watching them as well).
The closest series to me in essence are Noragami and Mahoutsukai no Yome for Inuyasha (which, the former is #7 in my Top 20 and the latter I'd place at #21) and Usagi Drop for Koi Kaze which is my #11 (and no, not for anything to do with later plot developments in the original manga as I consider those irrelevant to my watching of and experience with the anime series, as I treat all anime series as their own thing).

Fairy Tail. Because I watched it first (and never got into One Piece) I never really bought into the hate boner the western anime fan sphere has for the series. It's a perfectly good ensemble action adventure, that gets compared to possibly the biggest anime ever made, so usually gets trashed in response. I'm a lot more interested in seeing what strengths specific shounen series have now, instead of blindly following what the consensus is. That's why I'm a fan of black Clover too (the manga, not the anime). They all fill different niches and that's okay.

Toradora -- for HS romcoms, (& tsundere's :) For shoujo (which tend more to drama than comedy) I'll mention Kimi ni Todoke.
Maria-sama ga Miteru -- for yuri.
Of course CGDCT, HS romcoms, etc. aren't the only things I watch but for other genres I couldn't readily point to a specific show.

I think Konosuba largely contributed to my love of parody humor, hence why now Nyaruko and Isekai Ojisan are among my favorite series ever.
I don't think there is any anime in particular that defined my taste for other genres (just maybe Non Non Biyori for Slice of Life).
